Cashew Chicken with Noodles Recipe

If extra moisture is needed, add chicken broth. Small amount of peanut butter may be substituted for peanut oil.


8ounces uncooked thick rice noodles
¼cup soy sauce
2tablespoons cornstarch
3garlic cloves, minced
1pound boneless skinless chicken breasts, cubed
1tablespoon peanut oil (or small amount of peanut butter)
1tablespoon sesame oil
6green onions, cut into 2-inch pieces
1cup unsalted cashews
2tablespoons sweet chili sauce
Chicken broth (optional if sauce is too thick)


Cook rice noodles according to package directions. Meanwhile, in a small bowl, combine the soy sauce, cornstarch and garlic. Add chicken. In a large skillet, saute chicken mixture in peanut and sesame oils until no longer pink. Add onions; cook 1 minute longer. Drain noodles; stir into skillet. Add cashews and chili sauce and heat through. Yield: 4 servings.
