Chocolate Cake With Cream Cheese Filling and Walnut-Sugar Topping


Ingredients

CAKE:
3cups flour
2cups regular/white
sugar
6tablespoons
unsweetened cocoa
powder
2teaspoons baking
powder
1teaspoon salt
2cups cold water
¾cup vegetable oil
2tablespoons white
vinegar
2teaspoons vanilla
extract
CREAM CHEESE FILLING:
2(8-ounce packages)
cream cheese, at room
temperature
cup regular/white sugar
2eggs
½teaspoon salt

Directions

1. Preheat oven to 350 degrees F. and grease a 9x13 in. baking pan (I use a slightly smaller pan because I like it thicker, but it does take an extra couple of minutes to bake so be careful) 2. Make the Walnut(or almond)Sugar Topping Combine the chopped nuts and the sugar in a small bowl and set aside. 3. In a large bowl whisk together the flour, sugar, cocoa powder, baking powder, and salt. In a different and slightly smaller bowl, whisk together the water, vegetable oil, vinegar, and vanilla extract. Pour the wet ingredients into the flour mixture and mix together until just (but fully) combined. 4. Using an electric mixer, beat the cream cheese on medium speed until soft and smooth, about 3 minutes. Add the sugar and continue mixing until light and fluffy. Add the eggs and the salt and beat until combined and smooth. 4. Pour half of the cake batter into the greased pan, then pour all of the cream cheese filling over top. Try to pour an even layer without mixing it with the cake batter, don't spread. Pour the rest of the cake batter on top of the cream cheese layer, then evenly sprinkle the nut-sugar topping on top. 5. Bake for 35 minutes, or until a toothpick inserted in the center comes out with moist crumbs attached. Let cool completely before serving.
