Chicken-Mango Chopped Salad

Ingredients:

  • 1/4 cup mayonnaise 
  • 1/4 cup sour cream 
  • 2 teaspoons lemon zest
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons curry powder
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon salt 
  • 1/8 teaspoon ground cayenne pepper
  • 3 cups chopped or shredded cooked chicken
  • 4 cups chopped Napa cabbage 
  • 2 cups peeled, pitted, and chopped mango
  • small red bell pepper, chopped 
  • 1/2 English cucumber, chopped 
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped red onion

Preparation

  1. 1. Whisk together first 8 ingredients in a small bowl.
  2. 2. Combine chicken and remaining ingredients in a large bowl. Add dressing, tossing to coat. Serve immediately.
